Sit a Spell

My name is Connie.  I am southern born and raised and have lived in the Macon area for six years with my husband, three children (who are not so little anymore!), three dogs, a cat, three cows, one of which is like a pet and named Bella and a woodpecker that has moved in and made his life’s mission to destroy our front porch.  My family will tell you that I always have something to say so I thought blogging would be fun, a place where I can ramble about our life in the country, this lovely town that we have fallen in love with and now call home and maybe I will throw in a recipe or two!  I believe that a day without laughter is a day wasted so “sit a spell” with me and hopefully I can put a smile on your face!

This past Saturday was opening day of rifle season.  I went to Wal-Mart Friday during my lunch hour and I swear you would have thought they were giving away something for free!  It was crowded and the traffic through our small town was booming!  All the hunters are good for our area because they do spend money at the restaurants, grocery stores, gas stations, etc..  I guess that is worth all the traffic for the next two weeks!

Our local rural fire department always has a chili/soup supper the first weekend of opening day and a pork steak dinner the second weekend.  I normally contribute a couple of pies to this to help them out.  All the money raised goes back to the fire department.  I made a peanut butter pie and a strawberry cheesecake this year.  I made an extra peanut butter pie for my family and thought I would share the recipe.



I hope that all the deer hunters are safe this year and kill a big one!

Peanut butter pie

25 Oreos

1/4 cup butter melted

1 8 oz block of cream cheese (at room temperature)

1 cup of peanut butter

1 tsp of vanilla

1/2 cup of brown sugar

1 8 oz container of cool whip plus more for topping

Put Oreos into a food processor and mix into a fine crumble.  (The white stuff just disappears!)  Pour in melted butter and mix until combined.  Press into a pie plate and refrigerate for an hour to set.  (You can just use an already made chocolate pie crust if you wish but the oreos are good!)

Mix the cream cheese, peanut butter, vanilla and brown sugar until smooth.  Add the cool whip and mix well.  Pour into the pie crust and pipe on cool whip if you want.  Refrigerate for a couple of hours to set.  Enjoy!
